CHEESY VEGGIE QUESADILLAS






Ingredients: 
1 onion diced, 
1 each red and green pepper, seeded and diced, 
6 tortillas medium size, 
1 tbsp. canola oil, 
4 cups of shredded cheese, 
sour cream and salsa optional

1Heat oil in large skillet over medium high heat. Add onion and peppers stirring for 4 to 8 minutes until vegetables are tender and lightly browned. Remove vegetables from pan and set aside.

2Lightly coat one side of the tortilla with canola oil and place oil side in  a skillet over medium heat. Add 2/3 cup of cheese evenly on the tortilla, followed by 1/3 of the vegetable mixture. Next layer2/3 cup of cheese evenly on top of the vegetables. Place a second tortilla on top and brush lightly with oil.

3Cook quesadilla for 4  to 6 minutes flipping once, until cheese  is melted and tortillas are lightly browned. Repeat with remaining ingredients.

4Cut each quesadilla into eight pieces, and serve warm with sour cream and salsa

HONEY MUSTARD MEATBALL DINNER SUB






INGREDIENTS:
3tbsp chili sauce or ketchup, 
1egg,  
1/4 cup dry seasoned  bread crumbs, 
1 small garlic clove minced, 
1tbsp Worcestershire sauce, 
1tsp dried oregano, 
1/2tsp dried thyme, 
1/4 tsp pepper, 
1 lb extra lean ground beef, (Personalize  by using ground chicken, pork, turkey or veal)
2tsp canola oil, 
1 small onion, minced, 
1/4 cup honey mustard, 
1/4 cup water, 
6 small whole wheat sub buns,
1 cup chopped lettuce, 
1 tomato, chopped

1 In a large bowl. using fork stir together chili sauce, egg, breadcrumbs, garlic,  Worcestershire sauce, oregano, thyme and pepper until well combined. Add beef and mix together using hands to distribute evenly.

2 Using hands, roll meat mixture into about 30, 1 inch meatballs and place on parchment paper lined plate or tray.

3 Heat non stick skillet over medium - high heat, and brown meatballs in batches if necessary, turning occasionally on all sides for about 8 minutes or until browned. Remove.

4 Wipe skillet with paper towel and return to medium heat and add oil and cook onion for about 5 minutes or until softened. Add mustard and water; return meatballs to skillet and toss to coat, stirring occasionally with sauce for 3 minutes or until meatballs are no longer pink inside.

5 Divide meatballs and sauce among sub buns and top with lettuce and tomato

Reuben Crescent Bake





1 tube Crescent rolls
8-10 slices Swiss cheese
3/4 pound sliced deli corned beef
1/2 cup Thousand Island salad dressing
1 – 14oz can sauerkraut – drained
1 egg white – lightly beaten
½ tsp Caraway Seeds

Preheat oven to 375.
Unroll one tube of crescent roll dough. Place half in a baking dish that has been lightly sprayed with Pam. Seal perforations. Bake for approximately 8-10 minutes until golden brown.

After the bottom dough has baked, remove from oven.
Layer ½ of the cheese on top of the baked crescent rolls.

Next layer all of the corned beef.
Combine the sauerkraut and Thousand Island together.
Spread the sauerkraut over the corned beef.

Place the remaining cheese over the top of the sauerkraut.

Place the remaining half of the crescent roll dough on top of the last cheese layer. Carefully seal the perforations.
Brush with the egg white and sprinkle with the caraway seeds.
Bake for 12-16 minutes until the crust is golden brown.
Let stand for 5 minutes before cutting.
Serves 4

Beef Empanadas




Beef Empanadas
(makes 12 empanadas)
Ingredients
FILLING
1 large slice hearty white sandwich bread, torn into quarters
2 tablespoons plus 1/2 cup low-sodium chicken broth
1lb lean ground beef chuck
salt and pepper
1 tablespoon olive oil
2 medium onions, chopped fine (about 2 cups)
4 cloves garlic, minced
1 teaspoon ground cumin
1 1/2 teaspoons hot paprika
1/4 teaspoon cayenne pepper
1/8 teaspoon ground cloves
3/4 teaspoon dried oregano
1/2 cup cilantro leaves, coarsely chopped
2 hard-cooked eggs, coarsely chopped
1/3 cup raisins, coarsely chopped
1/4 cup pitted green olives, coarsely chopped
4 teaspoons cider vinegar
DOUGH
3 cups unbleached flour
1 cup masa harina (or unbleached flour as substitute)
1 tablespoon sugar
2 teaspoons salt
12 tablespoons unsalted butter, chilled and cut into 1/2" cubes
1/2 cup cold vodka
1/2 cup cold water
5 tablespoons olive oil
Directions
Process the bread and 2 tablespoons chicken broth in a food processor or blender until a paste forms (about 5 seconds). Add beef, 3/4 teaspoon salt, and 1/2 teaspoon pepper and pulse until the mixture is combined (about 6 to 8 1-second pulses).
Heat oil in a skillet over medium-high heat until shimmering. Add onions and cook,      stirring frequently, until beginning to brown (about 5 minutes). Stir in garlic, cumin, paprika, cayenne, oregano, and cloves. Cook until fragrant (about 1 minute). Add the beef mixture and cook, breaking the meat into 1" pieces with a wooden spoon until browned (about 7 minutes). Add the remaining 1/2 cup chicken broth and simmer until the mixture is moist but not wet (3 to 5 minutes). Transfer the mixture to a bowl and cool 10 minutes. Stir in cilantro, eggs, raisins, olives, and vinegar. Season with salt and pepper to taste, and refrigerate for at least 1 hour or until cool.
Meanwhile, work on the dough. Process together 1 cup flour, the masa harina, sugar, and salt in a food processor or blender until combined (about two quick pulses). Add the butter and process until homogeneous and the dough resembles a wet sand. Add the remaining 2 cups flour and pulse until the mixture is evenly distributed around the bowl (4 to 6 quick pulses). Turn the mixture out into a large bowl.
Sprinkle vodka over the mixture and use your hands to mix the dough until it becomes tacky and sticks together. Divide the dough in half, then divide each half into 6 equal pieces. Transfer the dough pieces to a plate, cover with plastic wrap, and refrigerate until firm (about 45 minutes).
To assemble, place 2 baking sheets in the oven and preheat to 425F. Remove the dough from the refrigerator. Roll each dough piece out on a lightly floured work surface into 6" circles about 1/" thick. Cover each dough round with plastic wrap while rolling the remaining dough. Place about 1/3 cup filling in the center of each dough round. Brush the edges of dough with water and fold the dough over the filling. Trim any ragged edges, then press the edges to seal. Crimp the edges with a fork.
To bake, remove the hot baking sheets from the oven and brush with 2 tablespoons olive oil. Return to the oven for 2 minutes. Brush the empanadas with the remaining tablespoon oil. Carefully place 6 empanadas on each baking sheet and cook until well browned and crisp (25 to 30 minutes), rotating the baking sheets halfway through baking. Cool the empanadas on a wire rack 10 minutes before serving.

Cheesy Ham And Garlic Sandwich Bake






Ingredients
1 pan 9 count Rhodes Warm N Serv Garlic Butter Rolls
4 ounces cream cheese
1/2 Tablespoon minced garlic
1-2 tsp dill weed (depending on preference)
1/3 lb of deli sliced ham
4 slices provolone cheese

Instructions

Cut rolls horizontally, and put back in foil pan.Mix cream cheese, minced garlic, and dill together, stirring well.Spread cream cheese mixture across the rolls, and then layer on the ham and cheese, and put the top of the rolls back on.Bake at 325 for 25 minutes, or until cheese is melted and bubbly.Enjoy!

Yummy Mummy Pizza




Try this ghoulishly tasty mummy pizza recipe, all your little spooks will love them!


Ingredients
1 loaf Rhodes™ Bread Dough, thawed but still cold
grated cheese
pizza sauce and toppings
1 egg, beaten


Instructions
Roll out dough into a tall, rounded pyramid shape and cut slits all around the outside edge.
Layer the cheese, sauce and toppings in the middle.
At the wide end of the pyramid, lift up the large triangle and tuck the edges behind, before rounding them to form the head.
Weave the cut strips over the toppings, one at a time, covering the ends with the last strip.
This will hold them in place.
Fold the two slits on the narrow bottom into the middle and roll the whole piece up, tucking it under the last woven strip.
Press it down firmly to keep it from coming unrolled.
Clip it in half and pull it slightly apart to form the feet.
Brush the mummy with egg and let it rise for 15-30 minutes.
Bake at 350° F for 25-30 minutes or until golden brown.

Smiling Jack Sandwich





Who can resist an edible jack-o-lantern sandwich when it's grinning at you?


Ingredients
2 or 3 Rhodes Texas™ Rolls, thawed but still cold
1 egg, beaten
suggested sandwich fillings: barbeque beef and cheese


Instructions
Press rolls together to form a flat oval shape.
With a knife, cut out a wide "V" shape in side of oval.
Rotate "V" about a quarter turn and tuck the point under the pumpkin to form a stem.
Trim, if necessary.
Place on a sprayed baking sheet.
Cut out 3 large triangles for eyes and a nose, and a large crescent shape mouth.
Leave some teeth in, if desired.
Cut 3 curved lines from top to bottom, almost all the way through the dough.
Brush with egg and let rise for 30 minutes.
Bake at 350°F about 20 minutes or until golden brown.
Let cool on rack and then slice horizontally.
Fill with piping-hot barbeque beef and cheese, or your own favorite sandwich-makings.
